Seven Seeded &emdash; The Dough Doesn’t Sleep

The CEO of Seven Seeded, David Dwek, invited me to the bakery to write a journal about the place. So I donned a sheer white coat like Doc Brown from Back to the Future and wandered into the mixing section.

Andy is the master mixer, nominated in this year’s Baking Industry Awards in the ‘Rising Star’ Category. Everyone dreams about having their own bakery says Andy, and aged only twenty one he’s making sure he learns all aspects of the business. At the moment, the mixing section is home. You cannot do this job hungover. If you mess up the measurements, the whole operation grints to a halt and tons of dough is wasted. Andy flinches at that word—waste.

Every good loaf starts with someone like Andy—hyper-focused, precise, and powered by carbs.

In the bakery, you can’t steal time. There’s no checking BBC Sport, or doom-scrolling. Dough waits for no one. Outside the oven section, Kaarchi smokes a cigarette for twenty seconds before running back in to stretch the focaccia. Nine years and counting at Seven-seeded, Kaarchi radiates strength and good humour. When he isn’t looking, his boss Daniel sneakily places a jug of oil on a scale, making Kaarchi’s bread weigh more. Amidst this highly niche banter, the pace never lets up. Quick feet. Quicker hands. And when Kaarchi throws down flour with a flourish of his wrist it’s like someone throwing dice at a craps game…and if I can dream a little more…when Kaarchi folds the sourdough I feel like I’m watching something ancient and primal. I am no longer in Watford in 2025. I’m in 10,000 bc watching the world’s first bakery.
